Wednesday’s are something of folklore at my place.
we got over prepped from Tuesday service (our slowest day)? Boom, wednesday becomes Tuesday^2.
on the other hand, we think “ah, its just Wednesday. we’ll prep for the weekend tomorrow, I got enough product for tonight”? We get our shit packed in lmao. never fails.
we had 24 on the books for tonight, and we were already 2 days ahead on prep, as well as short staffed, we didnt do more than 45, including walk ins.
on an under prepped day, tho? that 24 would have ended with 75plus walk ins smh
